Happy National Chocolate Wafer Day!
So it’s national chocolate wafer day….again. Seems like just yesterday we were celebrating Anisette. Oh wait, we were – yes it was national anisette day yesterday. I know, if I’m not going to blog every day how will you know what to celebrate? Sorry.
Well enough of that. The chocolate wafer. Not the thin ones, the wide ones. As a kid I can remember always wanting my mom to buy these. Not so much to have them as a cookie, but to have them so I could use them how God intended them to be used….an ice cream sandwich! I would cut out rectangular pieces of vanilla ice cream and slap it between two of these crispy, chocolaty cookies and enjoy summer with each bite. This was great until my sister discovered my secret and then I had to share them with her.
So go out and celebrate the day. Dunk them in milk, munch one with coffee, or do what I do and smoosh a chunk of ice cream between two wafers and eat up. Just don’t let anyone see you or you might have to share your treat with them. Enjoy!
